To disable live chat for a specific account, navigate to their account group chat in the chat module.
Click the three dots next to the user bubbles at the top right of the chat.
Click Settings.
Click "Hide account group chat in portal"
This turns off the default group chat and hides the bubble for your clients. You can still direct message your clients though or add them into channels. If they belong to more chats, the bubble will show back up.
